my sweet potato

Y’all know I love to cook, and since Tony can’t make grilled cheese (no lie, I’ve seen the aftermath, and it’s not pretty), I’m the top chef in our house. I never want  cooking to be more chore than pleasure, so to avoid culinary burnout, we typically go out to dinner at least once a week. Now, we like what we like, which means that we basically only go to four restaurants: The Top, Tapas 12, Satchel’s and Emiliano’s.

boniato.jpgEmiliano’s is our favorite by far, to the point that almost all the servers know us, and we can pretty much recite the menu verbatim. The last time we were there, we tried the mashed boniato, even though we weren’t exactly sure what it was. Turns out that boniato is a tropical sweet potato, and it was freakin’ awesome! I’ve been wanting to try the recipe at home ever since, and I finally got around to it this weekend.

Imagine if a white potato and a sweet potato had a baby, and that’s almost what boniato is like. It’s drier and fluffier than a white potato, less sweet and more subtle than a sweet potato and absolutely delicious. I may never make mashed potatoes again.
